Saline County Food Establishment and Lodging Inspections, May 13-19, 2017

Food Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from May 13 through May 19, 2017.

Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.

America’s Best Value Inn, 2403 S. 9th St. (May 17) Routine Inspection
– No Violations

Big Cheese Pizza, 730 S. Broadway Blvd. (May 16) Routine Inspection
– Uncovered hole in wall behind kitchen area handwashing sink.
– Floor by kitchen handwashing sink is missing tiles.
– Door to outside storage building was ajar by approximately 4 inches.
– Beirocks and chicken wings in front register area reach-in cooler not dated when made or opened. Corrected on site: dated chicken wings May 13 to May 19 and beirocks dated May 12 to May 18.

Big D’s House of BBQ, 501 Maple St. – Gypsum (May 19) Routine Inspection
– No Violations.

Casey’s General Store, 2404 S. 9th St. (May 15) Routine Inspection
– Birthday cake bites labeled as puppy chow or chocolate chip cookies. Corrected on site: birthday cake bites label placed on package.
– Lettuce chopper had dried on food debris on handle and cutting surface. Per deli clerk, chopper had not been used on day of inspection. Corrected on site: cleaned in place and moved blades to warewashing.
– Birthday cake bites labeled as puppy chow or chocolate chip cookies net contents. Corrected on site: birthday cake bites label placed on package.
– Birthday cake bites labeled as puppy chow or chocolate chip cookies, which do not have same ingredients or allergens. Corrected on site: birthday cake bites label placed on package.

Cookie House, 2259 S. 9th St. Suite 256 (May 16) Routine Inspection
– No Violations.

Gutierrez Restaurant, 640 Westport Blvd. (May 15) Routine Inspection
– Interior divider of ice machine had accumulation of mold.
– Ceiling in line area covered in dust.
– Sour Cream temperature at 48 degrees F. Pepper puree temperature at 48 degrees F. Yogurt sticks temperature at 49 degrees F. Milk temperature at 50 degrees F. Guacamole with fresh tomatoes temperature at 49 degrees F. Homemade pico temperature at 50 degrees F. All items inside Pepsi expo area reach-in cooler. Corrected on site: voluntary destrution of all items.
– Pepsi reach-in cooler in expo area has temperature of 53 degrees F. Corrected on site: moved potentially hazardous foods to walk-in cooler or voluntary disposed and called for service.
– Guard on large stand mixer was covered in dried on food debris. Corrected on site: cleaned in place.
– Hose hanging below flood rim of mop sink without back flow device. Corrected on site: raised hose above flood rim.
– Walk-in cooler door has hole on inside.
– Chest freezer top is loose and insulation is exposed.
– Walk-in cooler fan guards covered in dust.
– Fan guard in expo area covered in dust.
– Several plastic pans and lids were cracked and chipped. Corrected on site: sorted out broken dishware and removed from use.
– Light above clean dish side of warewashing room and light in back prep area not shielded or protected.
– Carton of raw shell eggs stored above container of cut zucchini inside walk-in cooler. Corrected on site: moved to bottom shelf. No leakage found.
– Plastic pans stored as clean area nested together with water between the pans.
– Foil pans and to go containers stored outside of original package on shelving in storage room.

Longhorn Steakhouse #5430, 2590 S. 9th St. (May 15) Routine Inspection
– Ice cream scoops stored inside of well of non-running water. Corrected on site: turned on water.
– Chicken wings temperature at 50 degrees F, shrimp temperature at 46 degrees F, calamari temperature at 46 degrees F, raw chicken pieces temperature 45 to 47 degrees F. All items inside southwest line breading cooler, which had temperature of 47 degrees F. Corrected on site: cooler stocked at approximately 11 a.m. on day of inspection, all items moved food to walk-in cooler and/or freezer to quick chill.
– Raw steak on shelf above ready to eat bacon inside walk-in cooler. Corrected on site: moved ready to eat bacon to top shelf above raw foods.
– Southwest line breading cooler 47 degrees F. Corrected on site: removed potentially hazardous foods and serviced during inspection.
– Knife inside northeast wall knife rack is covered in dried on food debris. Corrected on site: moved knife and knife rack to warewashing to be cleaned.
– Plastic pans stored as clean on shelf on clean side of warewashing machine nested together with water between pans.
– Bottle of furniture polish setting on top of bar prep area counter top. Corrected on site: removed from counter top.

Spangles #15, 1720 W. Crawford St. (May 17) Routine Inspection
– Cheese slices temperature at 59 degrees F setting inside pan on top of hamburger freezer since 9:00 a.m. on day of inspection. Temperature taken at 11:00 a.m. Corrected on site: moved to refrigeration to quick chill.
– Philly steak temperature 52 to 60 degrees F inside cold holding table since 8:00 a.m. on day of inspection. Temperature taken at 11:00 a.m. Corrected on site: moved to refrigeration to quick chill.
– Employee eating in food prep area next to consumers food. Corrected on site: employee educated and discontinued eating and washed hands.
– Spray bottle of sanitizer aimed at boxes of deli tissue on southeast storage rack in kitchen. Corrected on site: moved sanitizer to bottom shelf with other chemicals.

Wagon Wheel, 120 W. Kirwin Ave. (May 17) Expired License
– No Violations.

Wendy’s, 3019 Riffel Drive (May 15) Routine Inspection
– Stainless steel pans stored as clean on south rack nested together with water between pans.
– Wet wiping cloth setting on prep counter top in the back area. Corrected on site: disposed of cloth.
– Butter blend temperature at 65 degrees F and sour cream temperature at 49 degrees F inside cold holding top of register area since the morning of the day of inspection. Per person in charge, items came from reach-in cooler. Corrected on site: voluntary destruction.
